WINEMAKING AND AGEING
The grapes used to make this must are harvested by hand. The must undergoes cryomaceration at 4ºC and skin maceration for 20 hours. The alcoholic fermentation will take place in tanks at a temperature of between 16 and 18ºC, compared to the same, lowering the temperature to -3ºC.
